Often the most basic mexican dish is the tastiest.&lt;br/&gt;&lt;br/&gt; Authentic mexican chefs don&amp;#8217;t follow recipes or blueprints, they simply follow instinct, mixing veggies and cheeses with great success.&lt;br/&gt;&lt;br/&gt; One of the most popular cheeses in the mexican arsenal is Queso cheese, or Queso Asadero.Its very similar to Feta or Farmer&amp;#8217;s cheese or any other processed white mild cheese.&lt;br/&gt;&lt;br/&gt; And because this popular mexican cheese is similar to processed white cheese, it is very easy to replace it with other more easy to find local cheese like Jack&amp;#8217;s.&lt;br/&gt;&lt;br/&gt; For this Vegetarian Recipe i am going to use Queso cheese, but if you can&amp;#8217;t find it, use Mozzarela, Feta, Farmer&amp;#8217;s,Fontina etc.&lt;br/&gt;&lt;br/&gt; Queso is very popular in dishes like stuffed chili peppers or chiles rellenos.&lt;br/&gt;&lt;br/&gt; This recipe is very versatile, so be sure to experiment with ingredients. Swap and mix them how you want, try to be original.&lt;br/&gt;&lt;br/&gt; I am also using Jycama roots, but it is optional. If you have problems with jycama, leave it out, or swap it with other sweet root-like veggies.&lt;br/&gt;&lt;br/&gt; To start our Queso Asadero we need these ingredients.&lt;br/&gt;&lt;br/&gt; - about 2 cups of red onion,chopped - 1 cup of jicama, peeled and chopped (optional) - 2 sliced zucchini - 1 tablespoon of veggie oil - 1 sliced yellow squash - 1 sliced chayote - 2 teaspoons of cayenne pepper - 2 teaspoons of ground cummin - 2 chopped tomatoes - 1 tspoon of chili powder - 1 cup of queso asadero,crumpled - Salt and black pepper, or other spices,&lt;a href="http://www.bestmexicancooking.com/mexican-red-rice-recipe/" target="_self"&gt;mexican rice recipe&lt;/a&gt;&lt;br/&gt;&lt;br/&gt; How To Make Queso Asadero&lt;br/&gt;&lt;br/&gt; Our first step for this recipe is sauting the onions and garlic in our favourite skillet, for about 5 minutes.
